Iron Goddess of Mercy - Tieguanyin, is a variety of Chinese oolong tea with historical beginnings over 2000 years ago in Anxi county, Fujian.
It's a legend. As a tea farmer, through a dream from the Goddess, was told to look for a treasure in a nearby cave.  In pursuit of this treasure, the farmer saw standing in front of her, a single tea shoot.  From there, she transplanted the shoot and it grew into an exceptional crop and became one of the most famous teas in the world making it a "must-have." 
A roasted, nutty, steamed vegetal notes met with gentle floral to citrus notes that are pulled out the longer you steep.
